And did you know that many decaffeinated coffees are decaffeinated using toxic chemicals that are harmful for your health? Many decaffeinated coffees use chemical solvents like methylene chloride or ethyl acetate to remove the caffeine from coffee beans. With this method of decaffeination, the coffee beans are either boiled or steamed and then are either rinsed repeatedly in or soaked with these chemicals to remove the caffeine.
Methylene chloride is considered a carcinogen by the Occupational Safety and Health Administration (OSHA) and though the EPA has banned the use of methylene chloride, the FDA still allows a small percentage (0.001%) of methylene chloride to remain in coffee beans and be consumed. Many advocate groups have petitioned the FDA to ban methylene chloride all together from decaf coffee, but as of the date of this writing, it still remains.
According to Consumer Reports, "Coffee producers will sometimes say that beans decaffeinated with ethyl acetate are 'naturally decaffeinated' because the compound is naturally found in some produce. But as with methylene chloride, the ethyl acetate is typically produced synthetically and carries some risks at high doses." It is interesting to note that ethyl acetate is used in nail polish remover and methylene chloride is used in formulas to strip paint, among other things.
Urth Caffé has never, ever used any chemical processing in decaffeinating their organic and heirloom (non-GMO) beans. They have only ever used the Natural Mountain Water Process resulting in a pure, clean cup which is 100% chemical free and 99.9% caffeine free. This process offers the truest, richest flavor with the least caffeine of any decaf method.

I know, personally, what first drew me to Urth Caffé when their Melrose location opened was the fact that they served a delicious decaf espresso that tasted as good as (or better may I say) than the espresso I had enjoyed in Italy. And they used the Natural Mountain Water Process of decaffeination—a process and type of decaffeination that was nearly impossible to find at the time.
I had experienced severe headaches after drinking my morning name-brand decaf and had finally figured out that it was a direct result of the chemicals used to decaffeinate the coffee. Something that was supposed to be healthy, was actually harmful.
Since then, many studies have come out confirming the health hazards of the chemical decaffeination process and the health benefits of the Natural Water Process.
