Silvia Carolina Herrera Natural-Process Geisha Micro Lot - A Unique Offering Unlike Any Other
Urth Caffé now proudly offers single farm Silvia Carolina Herrera coffee. A truly unique and one-of-a-kind limited offering. This exceptional coffee is a certified organic natural-process Geisha micro lot from Chiapas Mexico. A very rare coffee and a true micro lot—only a limited amount available! This is a very special and renowned Geisha variety with a perfumed and delicately floral jasmine fragrance. It is a complex and subtle cup with hints of bright limey citrus sweetened with tropical notes of guava, papaya and custard.
Family-owned Nuevo San Luis Farm is nestled in the picturesque municipality of Ocozocoautla de Espinoza and boasts a variety of thriving diverse coffees on its six enchanting "pantes." Each cherry is meticulously and lovingly hand selected. And the family members work in unity and harmony to bring you an exquisitely crafted and flavorful coffee. This spectacular lot was grown at an altitude of 1640 meters (5380 feet) above sea level, hand harvested, then fermented for 24 hours in a tank. It is then slowly and meticulously dried for about three weeks on African raised beds. This process allows greater airflow and very importantly no uncontrolled fermentation.

Says Master Roaster Zachary Fogel, "All the hard work and loving care during harvest at Nuevo San Luis makes for an exceptional coffee that has it all - clarity, sweetness and depth. We're privileged at Urth Caffé to be able to offer Silvia Herrera's pristine natural process coffee. It showcases the clean jasmine fragrance Gesha is famous for, and delivers sparkling acidity paired with clean, sweet, tropical fruit depth."
Silvia Carolina Herrera Hernández - Matriarch of Nuevo San Luis Farm
During the natural drying process, fresh-picked coffee beans are sorted, then dried whole (skin on) on the large raised drying beds. Natural coffee drying (and the natural fermentation process that ensues) is the oldest method of processing and drying coffee. It is not as commonly used a drying process today because it is more reliant on uncontrollable variables such as weather. It is a wild yet controlled type of fermentation—as the coffee seed is able to access the yeast naturally form the fruit and skin of the cherry.
Silvia Carolina Herrera Hernández who is a descendant of coffee growing royalty and a beacon of community spirit, embodies the essence of a modern-day matriarch. Her farm—a mosaic of 50 hectares divided into the above-mentioned "pantes" delineates the diverse coffee varieties thriving on her land and symbolizes the unity of her family members who toil together in harmony under her guidance.

As the harvest season approaches, Silvia orchestrates a symphony of labor and love, ensuring that her workers are well cared for and that each cherry is meticulously hand selected. From January to April, the farm buzzes with activity as the precious coffee beans undergo a meticulous process of washing, drying, and quality assessment. Silvia's discerning palate and technical expertise are instrumental in crafting the exquisite flavors that define her coffee.[1]
